All about chocolate

Chocolate, which derives from the Nahuatl word xocolatl, means bitter water. The meaning behind this name stems from the Aztecs believing that chocolate is an aphrodisiac. They used pounded cocoa beans and other spices to make an unsweetened drink, or bitter water. However, the use of cocoa beans derieves all the way back to the Mokaya cultures where they first made cacao beverages around 1900 BCE.

Today we use the cocoa beans in other ways. The beans are first fermented, then dried and roasted before they are cracked to seperate the cocoa nibs from the shells. The nibs are ground, extracting some of the coca butter and leaving a paste called chocolate liquor. The chocolate liquor is then refined and different procedures are used to make the final product, depending on the chocolatier’s preference, as for example at the family run Amatller. This is what makes chocolate from different chocolatiers taste different.

Chocolate ready for consumption is divided in three categories: dark, milk and white.

Dark chocolate; is made from chocolate liquor, extra cocoa butter, sugar, an emulsifier plus vanilla or other flavorings. Sometimes milk fat is added to give the chocolate a softer texture. Dark chocolates often have a higher content of cacao

Milk Chocolate: contains the above mentioned plus milk solids. Milk chocolate has at least 10% cocoa liquor and 12% milk solids.

White chocolate: is made from cocoa butter, sugar, milk solids, an emulsifier and vanilla and sometimes other flavorings. It has at least 20% cocoa butter and 14% milk solids and up to 55% sugar.
